Fernando de Noronha in Brazil is remote but I can't recommend it highly enough. From the UK you can fly with Tap to Recife or Natal via Lisbon, then from there fly on to Fernando de Noronha – a stunning island with lots of marine life and beautiful beaches.

Bocas del Toro, Panama is also home to some top-notch sun, sea and sand. Iberia now operates direct flights from Madrid to Panama City. In my opinion, Panama City is so underrated – they’re currently restoring the historical part of the city and there are loads of trendy restaurants and bars. It reminded me a lot of Havana.

I would also suggest Cayo las Brujas in Cuba. You can fly direct from Gatwick to Havana with Virgin and then drive 3-4 hours to the caye, so it's quite straightforward.

Another good choice is Ambergris Caye, Belize, which has lots of lovely hotels and the village nearby has plenty of places where you can go and eat fantastic seafood. It's the gateway for diving in the Blue Hole. Belize is such a small country that if you want to combine rainforest and reef (plus throw some Mayan temples into the mix) this is the place to do so.
