Fajitas

Fajitas are a perfect choice when cooking for friends: the relaxed serving style allows your guests to choose from different fillings and means that you can easily cater to different tastes and dietary requirements. Our recipe serves four and has chicken as the main ingredient, but you could just as easily use beef steak (sliced into bitesize pieces as in the image) or even omit the meat for a healthy vegetarian option.

You can buy Mexican-style salsa and guacamole in almost every supermarket these days, but freshly homemade versions are well worth the effort and will improve your fajitas no end. Find out how to make our Perfect Mexican Dips.

Ingredients

  • 8-10 flour tortillas
  • 2 skinless, boneless chicken breasts, sliced into strips
  • 2-3 peppers chopped into long thin strips
  • 2 red onions, chopped
  • Tsp of chilli powder
  • Tsp of paprika
  • Tsp of ground cumin
  • Juice of a lime or lemon
  • Generous sprinkle of rock salt and black pepper 
  • Grated mature cheddar, to serve

Instructions

  1. Mix together the chicken, peppers, onions, spices, seasoning and citrus juice in a large bowl.
  2. Heat a large griddle pan or frying pan over a high heat. Add a teaspoon or two of olive oil, then pour in the mixture of ingredients and allow to sizzle, turning/stirring regularly, until the chicken is cooked through. (Note: if you are using beef instead of chicken, you may want to add the beef at a later stage so as not to overcook it). Meanwhile, warm the tortillas in a preheated oven.
  3. Once cooked, transfer the contents of the pan to a serving dish and bring to the serving table along with the stack of tortillas on a serving plate, and bowls of salsa, guacamole and grated cheese to garnish. Allow guests to make up their own fajitas from the assembled options.
